Vegan Tofu Whipped Cream Recipe



This recipe was inspired by The New Farm Vegetarian Cookbook.

1 cup soft tofu
1/4 cup oil
2 Tbsp honey, sugar, or maple syrup (or more to taste)
1 tsp lemon juice
1.5 tsp vanilla
dash of salt

Blend in a blender until creamy. Serve cold.

This was yummy! Slightly loose -- next time I'll use a firmer tofu and squeeze out the excess water. Simply perfect with strawberries:)
