Vegan General Tso's Sauce Recipe

Vegan General Tso's Sauce Recipe
Modified from VegWeb.com

3 chopped green onions (regular onions are okay, too)
1 Tablespoon minced garlic
1/4 teaspoon ground ginger
2/3 cup water
2 Tablespoons soy sauce
1/4 cup sorghum
1 Tablespoon white vinegar
Garlic chile paste to taste
1 Tablespoon cornstarch

Heat 3 Tablespoons oil in pan on medium heat. Add green onions, garlic and ginger, cook for about 2 minutes. Be careful not to burn garlic. Add water, soy sauce, sorghum, vinegar and red pepper. Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well. Once thickened, serve on veggies, tofu, tempeh, seitan and/or rice.

Cool Blog. I just heard about it through the dancing rabbit mass e-mail updates. I'm also a vegan and am excited to see what you vegans eat at the eco-village. I like the cinnamon dinner and the vegan pizza looks awesome- YUM! I'll be checking in a lot.

...Do you use fresh produce from your gardens?

Thanks Teresa! I'm glad to hear that people have an interest in finding out more about what we eat.

We definitely eat fresh produce from our gardens. Right now, nothing is ripe in the Skyhouse garden, but we get deliveries from Ironweed (DR's market gardeners) 3 days a week. In fact, just today we got asparagus, greens and salad!

Stay tuned for more Skyhouse produce as the summer progresses. Perhaps next year we'll have our greenhouse built and our produce will be ready earlier.
